A Corpinnat* of exceptional value, this sparkling wine from the Penedes region in Spain, is produced from organic grapes that were manually harvested. A classic blend of Macabeo (30%), Parellada (63%), and Xarel-lo (7%), it is made in the traditional method (champenoise) and is aged on lees for 24 months. Lemon green in appearance, the nose holds toasty and white fruit aromas, while on the palate it is delicate, fresh and structured. Can be enjoyed on its own, or pair it with soft cheeses, classic paella, seafood and chicken in light, creamy sauces, as well as some spicy Asian dishes. Alc/vol 12%. Residual sugar 5g/L
What is "Corpinnat"?
*If you're not yet familiar with the term "Corpinnat" you will be soon. In short, Corpinnat is an EU-recognised body that has broken from the Cava DO. Currently, 9 houses (including Nadal) are part of this classification which demands strict adherence to:
- Organic grapes, grown, pressed, produced and bottled at the winery
- Manual harvest
- Prohibited to buy grape must, wine or bottles that are already ageing
- Prohibited to produce for other brands, private or white label
- Obligatory disgorgement date on the label
- Minimum of 18 months on lees
Bob’s interpretation: "Although Corpinnat is in its infancy, I feel it is destined to grow into a world-class, respected designation synonymous with quality, value and sustainability. After many years of negotiation between the managing committee of the Cava DO by a small number of elite producers looking for recognition for the elevated standards that were self-imposed within the Cava DO, it was clear that this was not going to happen, so these winemakers decided to create a new classification - Corpinnat."
