Vino Nobile's ageing potential spans decades. If you plan on cellaring this vintage, the optimum maturation period recommended varies but is generally from the fifth to the eighth year after harvest.
Drinking it now makes it one of the pizza-friendliest wines, however, as it ages, its pairing potential moves toward more substantive proteins like beef briskets and grilled winter vegetables.
