Savigny-Les-Beaune is a lovely village in the Côte de Beaune near Beaune. The vineyards lie on both sides of a valley. With an altitude between 220 and 360m, this vine (about 65 ares of it) is extraordinarily located. It consists of the steepest slopes of the village. Impossible to work with a tractor, all the work is done by hand like in the past. It is a coveted monopoly (that is, Domaine Doudet is the only owner of this parcel) and the name of this vine (classified INAO) comes from its particular slope and the only way to harvest it. In other words - "Bottoms up"!
A shining and clear pale yellow colour. The nose is fine and expressive with its mixed aromas of white fruit, nuts, lemon, and stone. With its own identity and its interesting balance, the bottle shows true charisma. On the palate, the wine is lively, fresh and powerful. Never over-matured, but rich, well balanced with its delicate richness, with a long persistence finish shows, this wine shows true potential for the future.
An excellent accompaniment for any light dishes: fish (in sauce after the wine has matured 5 years), all delicatessen, shellfish, and poultry cooked in cream sauces (again after 5 years maturation).
