Superb deep purple color.
The nose is intense, marked by very ripe black fruits and spices (vanilla, pepper). The woodiness is nicely integrated.
Full bodied, the tannins are solid yet smooth.
Serve at 16 - 18 °C with ham, grilled rib of beef, speck with lentils.
The vineyard is located in the commune of Saint-Chinian, 25 km west of Béziers at the foot of the Montagne Noire. The terroir is clayey-limestone. The limestone formations were deposited by the sea in the secondary and tertiary eras. Typically Mediterranean climate, with hot, dry summers and mild winters with little rain.
Grape varieties: Syrah 75%, Grenache 25%.
- Manual harvest. Traditional vinification of the destemmed harvest.
- Fermentation, maceration and extraction for 20 days.
- Temperature control and regular pumping over.
- Aging in vats for 4 months then maturing in French oak barrels for 12 months.
